Quality cuts place Stone Wolf
 a cut above

Brian Krieger could not find a steakhouse that offered affordable, consistently good quality steaks, so he opened his own.

“We ate too many bad steaks while on the road, and I knew there had to be something better, so we opened our own steakhouse,” said Krieger, who along with his wife, Leslie, and business partner Robert Houston, opened Stone Wolf The Place for Steaks last month. The owners’ goal is to provide a good, affordable steak in an atmosphere that is cozy and comfortable.  

“One of our guests called the place adult-friendly,” Houston said, explaining that Stone Wolf is a family place where adults feel comfortable.  

Stone Wolf’s interior sports rich, dark woods. Lighting is soft. The staff is attentive. It is a combination that encourages guests to slow down and enjoy an unhurried dinner or linger over a drink, fireside, in the bar.  

“The fireplace was my wife’s idea; so were the leather sofas and overstuffed chairs,” Krieger said. “People love pulling them around the fire.”  

Rich surroundings bring high expectations, and the chefs deliver with custom charbroiled, aged steaks.  

“You know, you don’t have to have a pair of longhorns hanging on the wall to have an affordable steak dinner,” Houston said. 

“All our steaks are cut from grain-feed beef that’s been aged 21 days,” Krieger said. “Aging makes all the difference when it comes to tenderness and flavor. It’s one of the extras we feel is important and reflects our goal to provide the best steak at a reasonable price.”  

Steaks range from a 10-ounce sirloin to an 18-ounce porterhouse and come with salad, side and hot rolls. Each steak is basted with Stone Wolf’s signature house-made sauce.  

“I encourage people to taste their steak first before asking for the A-1,” Krieger said. “You just might find you like our sauce best.” 

The menu features a healthy selection of other items for meat lovers, including barbecued chicken, St. Louis-style ribs and a full-pound porterhouse pork chop. Skewered grilled shrimp, swordfish, bourbon-glazed salmon and Cajun lime tilapia are other options.  

“We also plan to feature blackboard specials,” Krieger said. “One on the menu plan is batter-fried lobster.”  

Available a la carte or as an entree add-on are Caesar or bleu cheese chopped salads. Entrée salads, sandwiches, nine appetizers (including Krieger’s famous steakhouse onion rings) and two soups also are offered. (Creamy thick lobster bisque laced with lots of lobster easily is one of the best menu values.) Encores include chocolate volcano cake filled with Godiva chocolate, a lush chocolate brownie, and a 6-inch chocolate chip cookie, each served with ice cream and drizzled with chocolate sauce.  

“We keep it simple,” Krieger said. “That’s how we created the entire menu. It’s simple – there’s nothing better than an affordable, great tasting steak.”

Sometimes, a name says it all. Such is the case for Stone Wolf The Place for Steaks, the new Wildwood restaurant in Dierbergs Town Center.

Stone Wolf owners Brian and Leslie Krieger and Robert Houston opened the steakhouse with the goal of serving great, affordable steaks in warm, comfortable surroundings.

A rich interior of dark wood, soft light­ing, cozy seating and an inviting fireplace invite guests to settle in and linger for a relaxing evening.

"The fireplace was my wife's idea; so were the leather sofas and overstuffed chairs," Brian said, adding that guests often pull up chairs fireside in the bar before or after dinner.

Meals are as satisfying as the ambiance, with steaks cut from grain-fed beef aged for 21 days taking top billing.

Those steaks range from a 10-ounce sirloin to an 18-ounce, porterhouse and are basted in a signature, house-made sauce, served with a salad, side and hot rolls. Other options include a porterhouse pork chop; St. Louis-style BBQ or bourbon ribs; BBQ chicken; and a deep-fried lob­ster tail dinner; fresh seafood entrees; and flavorful sandwiches. Tantalizing appetiz­ers, soups; fresh-from-the garden entree salads and delectable desserts also are featured.
